The summer solstice is right around the corner, and food is an important part of celebration, so why not share some delicious ways to celebrate? 3 nectarines, pitted and diced
1 jalapeno, minced (optional)
2 tablespoons red onion, diced
2-4 tablespoons of lime juice , to taste
1-2 tablespoons of cilantro, minced (optional)
Combine all the ingredients and refrigerate for 30 minutes before serving. Goes great over pork and other meats as well as a dip for chips.
pitted and halved peaches (estimate one half peach per person)
Grill each peach half until warmed through. Pull aside and let cool to room temp. Place a dollop of whipped cream on each peach half. Sprinkle chopped walnuts on top, drizzle with honey, and enjoy.
